Scope of Work
The contractor shall provide all personnel, equipment, supplies, and services necessary for meal preparation, transportation, serving, and cleanup. Key requirements include:
- Cooking food at the contractor's facility and transporting it to Building C, Marseilles Training Center.
- Serving meals for approximately 225 cadets and 30 cadre.
- Providing all serving equipment, chafing dishes, heating elements, utensils, and disposable plates, cups, and napkins.
- Setting up and maintaining a minimum of two serving lines for breakfast, lunch, and dinner.
- Preparing vegetarian meals for approximately 10 people per meal.
- Participating in a resource working group on June 8, 2026.
- Cleaning up serving and dining areas, including trash removal and table sanitization, after each meal.
Performance Standards & Requirements
- Meals must be ready to serve 15 minutes prior to scheduled serving times and kept hot.
- Equipment setup must be completed 30 minutes prior to serving.
- Contractor personnel must meet board of health standards, food handling requirements, and maintain a professional demeanor.
- Performance thresholds are 100% for the working group and no less than 95% for meal service timeliness, serving lines, setup, cleanup, and vegetarian meal accommodation.
- A Quality Control program must be developed and maintained.
- Personnel must comply with installation access requirements; no security clearance is required.
- Compliance with US Army Technical Bulletin Medical 531 and OSHA safety awareness is mandatory.
- The Government will provide the dining facility (Building C).
