- Cleaning hoods, ductwork, fans, and grease traps to bare metal or to remove all fats, oils, and grease (FOG).
- Replacing filters that cannot be satisfactorily cleaned.
- Complying with NFPA 96 (2024 Current Edition) and all other applicable federal, state, and local standards.
- Documenting and reporting any defects found in the systems.
- Services are to be performed after work hours (Canteen ends 5 pm, NFS ends 7 pm) with specific frequencies: Monthly for West Canteen Exhaust Hood System (Hood #2), Quarterly for East Canteen Exhaust Hood System (Hood #1), Canteen Grease Traps, and NFS Hood Exhaust Systems.
- Reporting requirements include before & after photos and a full maintenance/cleaning report within 5 business days, and affixing a Certificate of Performance label to each hood.
