  • Lessons learned from similar high-profile dining operations.

Context & Background

The MDR and Capitol Market will undergo extensive kitchen renovations from August 2025 to summer 2027, with services resuming in fall 2027. Detailed floor plans and an equipment schedule are provided (Attachment 1). Historical sales data from 2016-2025 for both the MDR (excluding catering) and Capitol Market is available (Attachment 3). Responses to vendor questions (Attachment 2) clarify operational details, historical practices, and areas for vendor input, including capacity, payment models, procurement, and aesthetic enhancements. The U.S. House of Representatives is not subject to Federal Acquisitions Regulations (FAR).
